- Place crumbled blue cheese, sour cream and mayonnaise in a food processor and mix for about a minute until well combined.
- Add in fresh lemon juice, half the salt, and fresh ground black pepper. Mix again.
- Check the consistency and taste, and add more seasonings if needed.
- If you have time - refrigerate for at least 30 minutes before serving.
- Adjust consistency by adding a dash of milk for a thinner sauce, or using less sour cream for a thicker sauce.
Notes
For a chunkier sauce, use a fork instead of a food processor. This sauce can be made ahead and stored in an airtight container in the fridge for up to 5 days. Do not freeze. Sauce thickens in fridge — adjust with milk if necessary.
